Founded by first-generation farmers Nick Weinstock and Danielle Larese, BOTL is a bold expression of what farming can look like when driven by deep values and fierce curiosity. Set on 41 acres of transitional silvopasture, the farm raises heritage breed pigs, sheep, goats, and chickens — all rotationally grazed, pasture-raised, and certified to the highest welfare standards. Nick, the “Primary Farmer,” brings years of experience in construction management and sustainability to the daily rhythm of the farm. Danielle, a theoretical physicist turned USDA scientist, brings a rare analytical lens to animal husbandry and pasture management, even as she continues her full-time off-farm scientific work. Together, they form an unlikely but powerful team: the builder and the scientist, united by their love of food and their shared belief that the best-tasting meat comes from animals who are respected, cared for, and allowed to live as nature intended.
