Copps Island Oysters is a fourth-generation, family-owned shellfish farm located in Norwalk, Connecticut—long revered as the historic “Oyster Town” of the East Coast. The business was formally founded in 1994 by Norman Bloom, though its roots trace back to the 1940s when his father, Norm Sr., and uncle Hillard began reviving Connecticut’s shellfish industry after its collapse in the mid-20th century. Today, with a fleet of 15 boats and thousands of acres of natural oyster beds, Copps Island continues to supply restaurants and consumers across the country with some of the freshest, most sustainably farmed oysters available.

Norman Bloom & Son is known for operating one of the last traditional, wild-harvest oyster farms in the United States. Their shellfish are cultivated using age-old seafloor farming techniques across the Norwalk and Westport Island chain—where sandy bottoms and nutrient-rich, fast-moving tides create ideal conditions for plump, sweet oysters with a signature briny bite.
