Cutting Hill Beef Company is a regenerative farm in Cornwall, Vermont, co-owned and operated by first-generation farmers Ramsay and Caroline Mellish. Ramsay discovered his passion for farming while working as a relief milker during college, eventually dropping out to pursue agriculture full-time. He and Caroline purchased their farm in 2016, tucked away along the New York border at the meeting of South Bingham Street and Cutting Hill Road.
The couple initially ran an organic dairy operation milking for Stonyfield, but when contract prices dropped in 2021, they began diversifying -- breeding a portion of their dairy herd to beef. Today they manage about 1,000 acres of owned and leased land, raising 200 dairy cows, 200 beef cows, heritage pigs, and laying hens, all integrated into a rotational grazing system. Their certified organic, pasture-raised beef and pork are available in ready-made boxes, bulk (whole, half, or quarter cow), and individual cuts, with free shipping throughout the Northeast. They also produce maple syrup from a small sugar bush on the property.
