About the Farm

Steve Schubart founded Grass Cattle Company after a journey that began on his parents' 15-acre hobby farm in Vermont's Green Mountains, where his love for animals first took root. Though cattle weren't part of his childhood landscape, every other creature you could raise in Vermont called that farm home. His path toward his own agricultural venture crystallized during his college years when he worked on a successful grass-fed beef ranch in Sonoma County, California while pursuing a degree in Economics.

Inspired by his California experience, Steve returned to Vermont to complete his education at Vermont Tech, earning both a Bachelor of Science in Diversified Agriculture and a Degree in Dairy Herd Management in 2016. That same year, he founded Grass Cattle Company LLC on leased land in Shoreham, Vermont, starting with 30 head of cattle and the help of good friends. After two successful seasons, he moved operations to a 160-acre farm along The Mud Hollow Brook in Charlotte, Vermont in 2018.

In spring 2019, Steve convinced a local bank to support him as a first-generation farmer, securing a loan to purchase the Charlotte farm that has been his base ever since. The company operates with a philosophy that goes beyond simply raising grass-fed and grass-finished beef. They cultivate the vital connection between livestock, grasslands, and soil to produce nutrient-dense local food, maintaining an agreement with every animal to respect it throughout its entire life. Their cattle enjoy lifetime pasture access through rotational grazing, and their beef is aged for superior tenderness and flavor, representing what they describe as food truly from the land.
