The farm's mission centers on a carefully developed breeding program for quality grass fed and grain finished Registered Polled Herefords. Under the guidance of third generation grandson Jake Lyons, who now heads up the cattle program, Overlook Farm has maintained its founding principles while embracing the knowledge and passion of a new generation. At the heart of Overlook Farm's philosophy lies an unwavering dedication to raising animals in a natural environment. Their free range cattle roam quality, green pastures without the use of hormones or antibiotics, staying with their mothers for eight months before harvest. The farm's commitment to quality extends through every aspect of production, including dry aging their beef for a minimum of 21 days to ensure a tender and flavorful product.
