Founded by Mark Maynard, the farm grew from a mission rooted in health and integrity: to provide hormone- and antibiotic-free meat and produce to local communities. Drawing from over three decades of experience in beef farming, Mark cultivated a model grounded in conservation, rotational grazing, and self-reliance—growing their own feed, managing pastures holistically, and adhering to regenerative soil practices.
The farm's ethos is simple but resolute: local, natural, and honest. Mark and his partner Stephanie personally manage every detail, ensuring that all animals are raised humanely, seasonally pastured, and nourished on the farm’s own Non-GMO grains and hay. Their Angus beef, Berkshire pork, free-range chicken, and Dorper lamb reflect not just high-quality cuts but a commitment to soil, animal, and human health. In the colder months, animals are kept in open shelters with ample space, maintaining their comfort and well-being year-round.
Beyond livestock, Ox Hollow cultivates 23 acres of vibrant vegetable gardens using organic, Non-GMO seeds. With minimal spraying, hand-tended soil, and compost from their animals, every crop reflects the same care found in their meats. Their CSA program, farm stands, and regular presence at Connecticut and New York farmers markets embody their belief that fresh, local food should be accessible and trustworthy.
