Sap Castle represents the enduring legacy of New England maple sugaring, where Jon Williams carries forward a tradition that spans generations on the same Rutland, Massachusetts property. As the third generation of the Williams family to sugar these woods, Jon continues work that has been ongoing for the last 80 years, on land that has been tapped since at least the mid-1800s. He and his wife Lauren make their home in the same 1830s farmhouse where his grandparents settled in the early 1940s to establish their dairy farm, and Jon taps the very same trees his grandfather Bill once harvested.
The farm's transformation into Sap Castle began with a vision and a community effort in November 2012, when Jon organized a traditional sugarhouse raising. After spending most of the year designing and cutting the joinery himself, family and friends gathered for a weekend to raise the timber frame structure by hand. Jon's craftsmanship extended to every detail of the building, as he spent another full year creating everything from the windows and doors to the walls, preparing for Sap Castle's first sugaring season in 2014.
Today, Sap Castle produces high-quality maple syrup and maple candy in their hand-raised timber frame sugarhouse, embodying the values of traditional craftsmanship and local production. The farm opens its doors during sugaring season, welcoming visitors to witness the maple syrup-making process firsthand. As proud members of Central Mass Grown and the Mass Maple Producers Association, Jon and Lauren maintain their commitment to excellence while preparing the next generation to continue this cherished family tradition.
