Tucked in the quiet town of Easton, Connecticut, Shaggy Coos Farm stands proudly as New England’s southernmost dairy—an operation built on principles of integrity, transparency, and deep care for animals and land. Founded and operated by Brittany, a passionate agriculturalist and mother, Shaggy Coos is a shining example of sustainable, small-scale farming. With a degree in Large Animal Science from Delaware Valley University and a master’s in Environmental Science, Brittany brings both heart and expertise to her farm. Her dedication has earned her the prestigious Alumni Achievement Award in Animal Science from her alma mater, and she actively uplifts her community through her work with the Fairfield Farm Bureau and local agricultural schools.
Alongside her trusted farm manager Rose—also a Del Val graduate and spirited 4-H leader—Brittany raises a variety of livestock in a humane, free-roaming environment. Every cow, pig, chicken, and turkey is raised with the utmost care, fed an all-natural diet, and given the freedom to thrive outdoors. The farm’s honor system store, open daily from 7 to 7, offers a nostalgic, self-serve experience filled with everything from hand-bottled cream-line milk and rich gelato to pasture-raised meats and eggs—all produced on-site with an old-world charm and modern ethical standards.
Shaggy Coos is more than a farm—it is a deeply personal mission to produce traceable, nutrient-rich food for future generations. Brittany farms for the future, for the land, and for her young son Kip, who will grow up knowing the rhythm of real farming. With cows named Clover, Tilly, Vienna, Indie, and Triscuit grazing happily in the pastures, every product that leaves the farm is a testament to the values of respect, quality, and quiet resilience. Shaggy Coos invites you to return to a simpler way of eating—one built on trust, care, and the enduring beauty of local food.
