About the Farm

Silver Lake Syrups began as a dream rooted in family tradition when Eric Withington decided to transform his lifelong hobby into reality in 2017. Growing up in Vermont, Eric learned the ancient art of maple sugaring in his uncle's sugarhouse, spending spring months tapping trees, gathering sap from hundreds of buckets, and watching the wood-fired arch transform raw sap into liquid gold. These cherished memories of boiling syrup the old-fashioned way inspired him to create his own legacy in the hills of Barnard, Vermont.

With the help of loved ones, Eric began constructing his sugarhouse using lumber milled from trees on his own property, and Silver Lake Syrups officially opened its doors in March 2018. The venture became a true family affair when Eric's Austrian-born wife Sonja brought her own heritage of crafting natural products from forest gatherings. Her childhood memories of creating herbal teas, syrups, and specialties from fresh greens, flowers, and berries found new expression in Vermont's landscape, where she discovered the same plants and herbs she once harvested in Austria's forests.

Today, the Withington family continues this beautiful fusion of Vermont tradition and European craftsmanship, with daughters Kimberly and Britney actively participating in every aspect of the operation. From tapping trees and stoking fires to marketing and entering syrup competitions, each family member contributes to their mission of sharing authentic, handcrafted Vermont products. Their commitment to old-fashioned methods, wood-fired evaporation, and natural ingredients without artificial additives reflects their deep respect for both the land and the time-honored traditions that brought them together.

Maple Open House Weekends: March 21-22 and March 28-29, 12pm-6pm. Summer/Fall Season: May-June Friday-Sunday 12pm-6pm, July-August Thursday-Sunday 12pm-8pm, September-October Friday-Sunday 12pm-6pm. Contact to schedule appointments for tours and shopping in off season.
