About the Farm

Sun One Organic Farm is a small but vibrant farmstead nestled within the rolling, fertile hills of Bethlehem, Connecticut. The Maddox family has tended this land since the 1890s, and it has remained a constant in the local agricultural landscape for over a century. Originally a dairy operation known as Three Springs Farm, it evolved into Sun One Organic Farm in 1998 when Rob Maddox inherited the land and reimagined its purpose with a deep commitment to sustainable farming and environmental ethics.

Rob Maddox brings a rare combination of political acumen, business expertise, and environmental passion to the farm. With an MBA from the University of Connecticut and years of service in local and state government, Rob pivoted toward green energy initiatives before returning to his roots in Litchfield County. That same devotion to ecological responsibility now guides every aspect of Sun One's operations. Under his stewardship, the farm employs no-till organic practices and works tirelessly to grow nutrient-dense produce that nourishes both people and the planet.

But Sun One is more than just a farm—it’s a community space, creative haven, and deeply personal expression of place-based living. With Airbnbs including a thoughtfully restored silo and a tranquil geodesic dome, visitors are invited to step into a slower rhythm and connect with the land. The farm also hosts weddings, events, and immersive internships, offering others a chance to live and learn within its ecosystem. Every inch of Sun One is a testament to Rob’s vision: that authenticity, care for the earth, and the sharing of beauty are at the heart of a life well-lived.
