Swell Oyster Co. is the first and only oyster farm in Hampton Harbor, New Hampshire, founded in 2017 by co-owners Conor Walsh and Russ Hilliard. The two met while earning their undergraduate aquaculture degrees at the University of Rhode Island and later worked together at the well-known oyster bar Row 34, where they decided that shellfish aquaculture was the perfect marriage of their passions for sustainability and being on the water.
Russ, a Hampton Falls native, and Conor, who moved to the Seacoast, chose Hampton Harbor as their farm site for its cold, crisp water and fast, hard tides, the perfect environment for growing fresh New England oysters. Swell Oyster Co. is the only farm in New Hampshire to grow oysters using suspended aquaculture, a method that produces consistent, hard, deep, easily shucked shells with full, plump meat. The farm also grows bay scallops and clams.
The company operates the Swell Oyster Shack on the Hampton State Pier, the first and only farm-to-retail shellfish shop in New Hampshire. In addition to their own oysters, the Shack carries oysters from other New England farms, littleneck clams, shrimp cocktail, lobsters, caviar, tinned fish, and house-made sauces.
