Twin Birch Farm emerged from the restoration of a forgotten 17-acre asparagus farm in Ipswich, Massachusetts, when owner Shendel Bakal discovered the abandoned property in May 2015. The land had fallen into disrepair after its previous owners stopped farming, leaving broken high tunnel buildings, damaged chicken coops, weed-choked fields, and a deteriorated pond. What others might have seen as overwhelming decay, Bakal envisioned as opportunity.
The transformation began with painstaking restoration work. Bakal built a house on the property, planted new asparagus fields, cleaned and restored the pond, trimmed decorative trees, and leveled fields to prepare for new plantings. The farm's unique growing conditions, including rich soil content, proximity to water that creates beneficial climate effects, a high water table, and level fields with abundant sun exposure, naturally guided the selection of specialty crops that would thrive in this boutique-style operation.
Since its founding, Twin Birch Farm has grown into a year-round organic operation that serves the local community with an ever-expanding collection of produce. The farm began with foundational crops like asparagus, garlic, specialty onions, gourmet potatoes, rhubarb, and decorative plants including winterberry, corkscrew willows, pussy willows, hydrangea, and lavender. Each year brings new additions to the farm's offerings, from chickens and grapes in 2018 to Brussels sprouts in 2019, winter squash and sunflowers in 2020, and early green leafy vegetables from the rebuilt high tunnel.
