Founded in 2009 by Jules Opton-Himmel, Walrus and Carpenter Oysters has grown from a small passion project into one of Rhode Island’s most recognized oyster farms, supplying over 50 restaurants and markets locally and expanding nationally. With farms in Dutch Harbor (Jamestown) and Point Judith Pond (Narragansett), the company takes pride in producing two signature oyster varieties: the briny, beginner-friendly “Dutchies,” and the complex, sweet “Rocky Rhodes.” A third offering, “Thomas Points,” comes from a sister farm operated by their farm manager, grown over nutrient-rich underwater springs for a unique flavor profile.

Now owned by Brad Boehringer, the company blends hard science with sustainability and a lean farming philosophy—minimizing waste and constantly improving processes to benefit both the environment and product quality. Oyster farming plays a vital ecological role, filtering water, reducing nitrogen, and creating marine habitats. Their floating bag culture method ensures strong, shuckable shells and consistent quality.
